For summer crowds looking for a lighter meal, Los Angeles-based Jinya Ramen Bar, with 25 locations, is offering a broth-less version of ramen with thick noodles, pork soboro (seasoned ground pork), kimchi, cilantro, bean sprouts, cucumber, sesame seeds and a soybean paste-based sauce called jya-jiang.
